Ingredients
- 200 g cream cheese (softened)
- 150 ml passionfruit pulp (strained)
- 300 ml heavy cream (chilled)
- 200 ml whole milk (chilled)
- 120 g granulated sugar
- 5 ml vanilla extract
- 60 g graham cracker crumbs (finely crushed)
- 15 ml fresh lemon juice
Method
- Preheat oven to 160°C. Press the graham cracker crumbs firmly into the base of a 20cm springform pan to form an even crust layer.
- In a medium bowl, beat the softened cream cheese with an electric mixer on medium speed until completely smooth and free of lumps, about 2 minutes.
- Gradually add the sugar and vanilla extract, continuing to beat until the mixture is light and fluffy, scraping down the sides as needed.
- Whisk the strained passionfruit pulp and lemon juice into the cream cheese mixture until it is fully incorporated, resulting in a uniform vibrant colour throughout the entire base mixture.
- In a separate large chilled bowl, whip the heavy cream and milk together on high speed until soft peaks form, taking care not to overwhip.
- Gently fold the cream cheese mixture into the whipped cream in three additions to maintain volume and avoid deflating the base.
- Pour the combined filling over the prepared crust in the pan and smooth the top with a spatula for an even surface.
- Bake for 10 minutes then turn off the oven and leave the cheesecake inside with the door closed for 1 hour to set gently without cracking.
- Transfer to the refrigerator and chill for at least 3-4 hours until fully firm before slicing and serving.
