Rose Pistachio Turkish Delight Soft-Serve

Ingredients
- 400 ml whole milk (cold)
- 300 ml double cream
- 120 g caster sugar
- 25 g cornflour (mixed with 2 tbsp milk)
- 25 ml rose water
- 80 g shelled pistachios (lightly toasted and chopped)
- 5 ml vanilla extract
- 1 pinch salt
Method
- Combine the milk, cream, sugar and salt in a medium heavy-based saucepan and heat over medium-low, stirring until the sugar fully dissolves and the mixture reaches 75 °C without boiling.
- Whisk the cornflour slurry into the warm dairy base and continue cooking, stirring constantly, until the mixture thickens enough to coat the back of a spoon and reaches 82 °C.
- Remove from heat, stir in the rose water and vanilla extract, then pour through a fine sieve into a clean bowl to remove any lumps.
- Cover the surface with cling film to prevent a skin forming and chill in the refrigerator for at least three hours or overnight until the base reaches 4 °C.
- Pour the chilled base into a pre-frozen soft-serve machine or ice-cream maker and churn according to manufacturer instructions until it reaches a soft, pipeable consistency with visible soft peaks.
- In the final two minutes of churning, add the toasted chopped pistachios so they distribute evenly without breaking down completely.
- Transfer immediately to a chilled piping bag fitted with a star nozzle and serve straight away, or hold in the machine on the soft-serve setting for up to thirty minutes.
