Wagyu Pastrami Reuben Sandwich

Wagyu Pastrami Reuben Sandwich

The Wagyu Pastrami Reuben brings together bold flavors in a structured sandwich that feels both familiar and refined. Wagyu pastrami offers superior fat distribution for juicy texture without dryness, while caramelized onions add natural sweetness that tempers the saltiness of the cured meat. Sauerkraut contributes bright acidity and crunch, and chipotle mayonnaise introduces a subtle smokiness that ties everything together. This recipe suits weekend lunches, game-day spreads, or weeknight meals when you want something substantial yet straightforward. Difficulty is moderate due to the onion caramelization step, which requires patience but rewards with deep flavor. It works well for omnivore gatherings and pairs nicely with cold beer or iced tea. The sandwich holds up reasonably for meal prep if components are stored separately.

Ingredients

  • 4 slices rye bread (thick cut)
  • 300 grams Wagyu pastrami (sliced)
  • 2 medium yellow onions (thinly sliced)
  • 150 grams sauerkraut (drained)
  • 60 grams mayonnaise
  • 1 tablespoon chipotle peppers in adobo (minced)
  • 30 grams butter (softened)
  • 4 slices Swiss cheese

Method

  1. Melt half the butter in a heavy skillet over medium-low heat and add the sliced onions, stirring occasionally for even cooking without burning.
  2. Continue cooking the onions until they turn a deep golden brown and become very soft, adjusting heat if they begin to stick or darken too quickly.
  3. Mix the mayonnaise with the minced chipotle peppers in a small bowl until fully combined, tasting and adjusting the amount of chipotle for desired heat level.
  4. Butter one side of each rye bread slice and place them buttered side down on a clean work surface to prepare for assembly.
  5. Spread the chipotle mayonnaise generously on the unbuttered sides of all four bread slices, ensuring even coverage to the edges.
  6. Layer the Wagyu pastrami evenly across two slices, followed by the caramelized onions, drained sauerkraut, and Swiss cheese slices.
  7. Top each sandwich with the remaining bread slices, mayonnaise side inward, then press gently to compact the layers without squeezing out fillings.
  8. Heat a large skillet or griddle over medium heat and cook each sandwich for three to four minutes per side until the bread is golden and cheese has melted.
